I’m not really a fan of mayonnaise, but I do use it when necessary. I’ve been a long-time buyer of Hellman’s Mayonnaise, but about a year ago, I picked up a jar of Duke’s on a whim, and I’m never going back. It actually tasted good! I will even put it on sandwiches occasionally (which is not really a thing I did before). Did you know that when making a grilled sandwich, you can put it on the outside instead of using butter, and it makes a nice, evenly browned crust? Well, you do now!
I went through the first small jar pretty quickly. When it was time to buy another jar, I went for the economy size because my eyes were bigger than my stomach. The jar is expiring soon, so I had to figure out a way to use some of it up because I don’t like wasting food. I looked around for some recipes and found mayonnaise cookies and chocolate mayonnaise cake. The cookies were pretty good; they had a similar texture to pecan sandies. The cake was fine, not as good as the cakes I make for birthdays, but more in line with a one-bowl kind of cake. The cake’s frosting was great, but did not contain mayonnaise, because there’s no need to be ridiculous about it.
